When I was pregnant (which happened three times in my life, after all 😉), I cooked a lot. And especially… pastries.
Sweet indulgence is part of my story.
During my first pregnancy, I even considered creating a food truck to sell crêpes in Australia. At eight months pregnant, I went to Brittany to learn how to make authentic Breton crêpes.
During my second pregnancy, I wanted to take the French pastry diploma (CAP pâtissier). I remember a completely failed fraisier cake: the pastry cream had spilled all over the dish… Luckily, my family and friends are kind!
For my third pregnancy, I became more reasonable and attended pastry workshops in Aix-en-Provence.
Today, I’m not an expert, but I truly love good food, and I adore sharing my favorite gourmet addresses in Aix-en-Provence.

Christophe’s Madeleines in Aix-en-Provence

A madeleine filled with history
A madeleine is a soft sponge cake made with eggs, sugar, flour, and butter, usually shaped like a shell. It was supposedly created in 1755 at the Château de Commercy for King Stanislas of Poland. His cook, Madeleine Paulmier, is said to have invented this now-iconic recipe.
It’s impossible to mention madeleines without referring to Proust’s famous madeleine, the symbol of childhood memories in In Search of Lost Time.
Christophe Monterin: madeleines that became an institution in Aix
“Christophe” is actually Christophe Monterin.
He founded his business in 2006. At the time, he couldn’t afford a boutique in the historic center of Aix-en-Provence, so he began selling at the Aix market. A simple idea… but brilliant.
He chose the madeleine: traditional, affordable, comforting.
Very quickly, success followed. His handmade madeleines in Aix-en-Provence sold out. Customers came back. Word of mouth worked. He eventually opened his boutique on Rue Gaston Saporta.
The madeleines are baked at the back of the shop. And if you’re lucky, you might taste them still warm — melted butter, softness, delicate aroma… a true sensory experience.

Maison Weibel was founded in 1954 by Georges Weibel. At the time, the shop was called “Au Péché Mignon.” In 1987, his son Nicolas took over the family business and continued developing this renowned Aix pastry house, celebrated for the quality of its products.
In 2016, Maison Weibel was renovated and modernized, further strengthening its reputation in Aix-en-Provence. Today, Nicolas’s sons carry on the family tradition, leading what has become a true kingdom of Provençal pastry.
One of Weibel’s signature cakes: the Aixois
Among the emblematic creations of Maison Weibel, I would like to introduce the Aixois.
This signature cake pays tribute to the city of Aix-en-Provence. It is made of calisson mousse, a vineyard peach and roasted apricot insert (an insert is a thin horizontal layer inside the cake), all surrounded by crisp macarons.

Awarded Meilleur Ouvrier de France in 1991, Philippe Segond is a true reference in the world of French pastry. Coming from a family of restaurateurs and pastry chefs, his path seemed almost destined from the start.
In his boutique located on the Cours Mirabeau in Aix-en-Provence, he offers sweet creations that are both elegant and artistic. Each cake is conceived as a work of art: precision, balance of textures, harmony of flavors.
Today, Philippe Segond is one of the most awarded pastry chefs in the region, and his shop has become a must-visit address for lovers of fine pastry in Aix-en-Provence.
